Protein is often counted as a single number on a nutrition label. Nutritionally it functions as a delivery system for twenty amino acids, and the balance of those determines what the body can do with it.

Some amino acids cannot be made internally

The body can synthesise most amino acids from other materials. Nine cannot be made at all and must come from food, which is why they are called essential.

Animal proteins broadly resemble human tissue in composition, so their amino acid profile matches requirements closely.

Individual plant proteins tend to be lower in one or two essential amino acids, with cereals and legumes limited by different ones.

Combining sources across a day covers the shortfalls, since the amino acid pool circulating in the body is not reset between meals.

Digestibility is part of the score

An amino acid present in a food is only useful if it survives digestion and crosses the intestinal wall.

Plant sources often contain compounds and fibre structures that reduce this, which is why modern scoring systems measure absorbed amounts rather than analysed content.

Cooking, soaking and fermentation all raise digestibility, so the same ingredient scores differently depending on preparation.

Why total intake is judged alongside quality

A lower-quality protein eaten in sufficient quantity can still supply enough of the limiting amino acid, which is how many traditional diets meet requirements.

Quality matters most where total intake is constrained, which applies to older adults with reduced appetite and to people eating restricted diets.
