Given a larger serving, people eat more of it, and they do so without reporting greater fullness afterward. The effect is one of the more reproducible findings in eating research.

Meal endings are decided by cues as much as by signals

Internal fullness signals from the stomach and intestine develop over the course of a meal, but they arrive with a delay and give an imprecise reading of quantity.

People therefore rely heavily on external cues to judge when a meal is finished, including how much was served, whether the plate is empty and what others are eating.

Because those cues arrive before the internal signals have resolved, they often determine the endpoint of a meal before physiology has weighed in.

The unit itself carries meaning

A single item, a single package or a single serving is read as one unit regardless of its size, and finishing the unit is treated as a natural stopping point.

This is why the same food eaten from a large container is consumed in greater quantity than the identical food divided into smaller ones.

Packaging that segments a product into portions introduces stopping points that a bulk container does not provide, changing intake without changing the food.

Visual estimation is systematically biased

People judge quantity by height and by the fraction of a container filled, both of which are poor guides to volume. Volume grows faster than height as containers widen.

A short wide glass and a tall narrow one holding identical amounts are consistently judged differently, and pours differ accordingly.

Plate size interacts with the same bias, since a fixed amount looks smaller on a larger surface and is often supplemented to look correct.

Normal portions are learned from what is served

Expectations about appropriate quantity are formed by repeated exposure to what restaurants, packages and households present as a serving.

Portions offered in American food service have grown over recent decades, and the reference point people carry has moved with them.

This is one reason label serving sizes based on measured consumption can look larger than expected: they describe the current reference rather than an earlier one.

What follows from the mechanism

Since the effect operates below deliberate attention, awareness of it does not reliably prevent it, which is why environmental arrangement is studied more than instruction.

Serving from a plate rather than a container, and using consistent dishware, changes the cues rather than requiring the cues to be overridden.

Weight management for medical reasons involves considerably more than portion cues, and belongs with a physician or registered dietitian rather than with a single behavioral finding.
